In a microwave safe bowl, add in your almond butter, maple syrup, and vanilla extract. Mix and heat for a minute.
Then add in your brown rice crisps. Make sure to mix evenly.
Spread in a bread pan lined with parchment paper. Freeze for 30 minutes.
In a microwave safe bowl, heat up your chocolate chunks and coconut oil together for roughly 30 seconds.
Spread evenly over your rice crisps. Top with some crushed rice crisps.
Freeze for at least another 30 minutes before cutting & enjoying!
