Ingredients

Veggies – (use whatever veggies you like. Below is what was used for this recipe.)

    Tofu –

    • 1 block extra firm tofu
    • 3 tbsp soy sauce (tamari if following gluten free diet)
    • 1 tbsp sesame oil
    • 1/2 tbsp garlic, minced
    • 1/2 tbsp ginger, minced

    Peanut Lime Sauce –

    • 1/2 tbsp garlic, minced
    • 3 tbsp natural peanut butter
    • 2 tbsp soy sauce (tamari if following gluten free diet)
    • 1 tbsp sesame oil
    • 2 tbsp fresh lime juice
    • 1/2 tbsp coconut sugar
    • 1 to 2 tbsp water

    Rainbow Rolls –

    • 1 package Rice Paper (Spring Roll Wrappers)

    Instructions

    Tofu –

    • Preheat oven to 425F.
    • Line a baking sheet with parchment paper.
    • Press the water out of the tofu and slice it into strips. In a bowl mix together the soy sauce, sesame oil, garlic, and ginger.
    • Coat the strips of tofu in this sauce and then lay the tofu on the baking sheet lined with parchment paper.
    • Bake the tofu at 425F for 10 mins, take out of oven and flip over, then bake for another 12 minutes until crispy. When done, set aside.

    Peanut Lime Sauce –

    • In a bowl mix the garlic, natural peanut butter, soy sauce, sesame oil, fresh lime juice, coconut sugar, and 1-2 tbsp water to thin out as needed. Set aside.

    Rainbow Rolls –

    • Dip your rice paper roll in warm water for around 30 seconds and then lay on a cutting board. 
    • Place the veggies of your choice on the roll with a few strips of baked tofu, roll up and repeat.
    • Once completed, dip in peanut lime sauce to eat.
    • Enjoy!
