As Janet of Janet’s Munch Meals writes, “Yesterday, I was in the mood for a creamy dressing, and was pretty much ecstatic when I realized I have some unsweetened coconut yogurt on hand. Has that ever happened to you? That blissful feeling when you remember you have the magical ingredient needed for a recipe?”

“Spinach Radicchio Salad with Vegan Creamy Herb Dressing has baby spinach, radicchio, toasted walnuts, cucumbers, and the dressing below (I used So Delicious brand unsweetened yogurt). And add chickpeas if desired (I did later!)”

Are you familiar with radicchio? Radicchio is a perennial and sometimes known as Italian chicory because of its common use in Italian cuisine. It is grown as a leaf vegetable and usually has colorful white-veined red leaves that form a head. Radicchio has a bitter and spicy taste which mellows if it is grilled or roasted. And as in this recipe, it can be used tossed fresh and raw into a salad.

Sidenote – Have you seen the new movie coming out in September named “The Game Changers?” For anyone who believes in eating plants, and especially for those on the edge of deciding “do I or don’t I change to a plant based diet,” you have got to watch the trailer for this movie. I can’t wait to see it!

But back to radicchio. What a great addition to a summer salad. And this recipe will not disappoint!

Ingredients

Salad – (use as much or little of the ingredients below)

  • fresh spinach, washed and drained
  • radicchio, washed and torn into bite sized pieces
  • toasted walnuts 
  • cucumbers, sliced and/or chopped
  • chickpeas (optional)

Vegan Creamy Herb Dressing –

  • 1/2 cup unsweetened plain vegan yogurt
  • 1/4 of a large lemon, juiced
  • 1/4 tsp kosher salt
  • 1/4 tsp garlic powder
  • 2 tbsp packed chopped cilantro
  • 1 tbsp packed chopped dill
