A little about Zucchini – Zucchini are by far the most popular summer squash in North America. Picked and eaten while still immature, zucchini have a soft shell and tender light-colored flesh that has a delicate, crisp, fresh flavor.

Zucchini, like other summer squash, are about 94 percent water, making them one of the lowest calorie vegetables. One cup of raw slice zucchini has less than 20 calories and proves 28 mcg of folate, about 7 percent of the adult recommended dietary allowance, as well as 12 mg of vitamin C and 250 mg of potassium. Who would have known?

And now a little about the history of desserts. Sweets were fed to the gods in ancient Mesopotamia and ancient India. Dried fruit and honey were probably the first sweeteners used in most of the world, but the transporting of sugarcane around the world was vital to the development of dessert.

Europeans began to manufacture sugar in the Middle Ages, and more sweet desserts became available. Even then sugar was so expensive usually only the wealthy could indulge on special occasions. The first apple pie recipe was published in 1381. The earliest documentation of the term “cupcake” was in “Seventy-five Receipts for Pastry, Cakes, and Sweetmeats” in 1828.

The Industrial Revolution in Europe and later America caused desserts (and food in general) to be mass-produced, processed, preserved, canned, and packaged. Frozen foods, including desserts, became very popular starting in the 1920s when freezing emerged.

Ingredients

  • 1 large zucchini grated
  • 1 cup pumpkin purée
  • 1 cup almond butter
  • 3/4 cup cocoa powder
  • 1/2 cup maple syrup
  • 2 vegan eggs
  • 1 tsp baking soda
  • 2 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 cup vegan chocolate chips (whatever kind is your favorite)

Instructions

  • Use kitchen towel to squeeze excess moisture from zucchini.
  • Whisk the rest of the ingredients together.
  • Fold in zucchini. Pour batter in muffin tray. Cover muffins with your favorite chocolate chips. 
  • Bake at 375 for 30 minutes.
  • When done, cool for 15 minutes.
  • Enjoy!
